OREGON SEA SALT

Flake finishing salt is a sea salt with large, delicate, pyramid-shaped crystals that is meant to be sprinkled over food right before serving, adding a bright burst of flavor and a satisfying crunch instead of dissolving invisibly into a dish.

Our Pure Flake Sea Salt is hand-harvested from the cold, pristine waters of Netarts Bay on the Oregon Coast: bright and briny, with a delicate crunch and no bitter aftertaste. Kosher salt is a coarse-grained salt with larger, flakier crystals than ordinary table salt, prized by cooks because its texture is easy to pinch, measure by feel, and sprinkle evenly by hand. Its name comes from the koshering process of drawing moisture from meat, where the textured crystals work especially well.

Jacobsen Salt Co. Kosher Sea Salt is made from seawater from the Pacific Ocean. We hand-harvest our sea salt in Netarts Bay on the Oregon Coast, so you get the fluffy texture of kosher salt with the clean, bright and briny flavor of sea salt. It's perfect for everyday cooking, roasting, brining, pickling, and seasoning.

The simplest way to think about it is that 'kosher salt' describes a crystal shape, while 'sea salt' describes a source. Kosher salt has coarse, flaky grains built for pinching and sprinkling; sea salt is made by evaporating seawater and carries trace minerals from the water it came from.

The two categories can overlap, and ours is a great example. Jacobsen Salt Co. Kosher Sea Salt is both at once: kosher-style crystals made from seawater, hand-harvested in Netarts Bay, Oregon, so you get easy-to-handle texture and the clean, bright minerality of genuine sea salt.

The biggest differences are crystal size and what's added. Table salt has tiny, uniform, machine-processed grains and usually contains anti-caking agents and added iodine, while kosher salt has larger, coarser flakes and typically nothing else, which is why many cooks prefer its clean taste and easy-to-pinch texture.

Because the crystals are bigger, kosher salt is also less dense by volume, so a teaspoon of kosher salt is less salty than a teaspoon of table salt. Jacobsen Salt Co. Kosher Sea Salt takes it a step further: it's a pure sea salt with no additives, hand-harvested in Netarts Bay and known for its bright and briny flavor.

Our Pure Flake Sea Salt and Pure Kosher Sea Salt have the same source; both are harvested from the briny waters of Netarts Bay. Both also share the same flavor, with the difference being the texture and size of the salt grain.

Our Flake Sea Salt is our largest grain – bright and briny flakes with a delicate texture and crunch. This salt is best as a finishing touch on dishes and desserts that are already prepared.

Our Kosher Sea Salt is made up of smaller and coarser-grained crystals. This salt is perfect for everyday cooking, roasting, brining, pickling, and seasoning.

No, sea salt doesn't expire. As a natural mineral, pure sea salt has an indefinite shelf life and won't spoil when stored properly.

Keep it in a sealed container somewhere cool and dry, since salt readily attracts moisture from the air, which can cause harmless clumping (just break it up). One note: our infused salts contain other ingredients, so those are best enjoyed within the window noted on the package for peak flavor.

You can substitute Fine Sea Salt for kosher salt; just use less, because finer crystals pack more tightly and taste saltier by volume.

As a starting point, use about 3/4 teaspoon of Jacobsen Fine Sea Salt for every 1 teaspoon of Jacobsen Kosher Sea Salt, then adjust to taste. The most reliable method is to measure by weight rather than volume, since a gram of salt is a gram of salt regardless of crystal size. When a recipe calls for a finishing touch, reach for our flake salt instead.

What sets our Pure Flake Flake Salt apart is where it comes from and how it's made. It's hand-harvested from Netarts Bay on the Oregon Coast, where the bay's natural oyster beds help create exceptionally bright, clean seawater, and every batch is hand-graded and sorted, so only the fully formed pyramid crystals become our flake salt.

Our sea salt is uniquely crafted to create a bright, briny flavor and crunchy texture with no bitter aftertaste. Our sea salt provides a clean burst of salinity that is a reflection of this bay and our attentive saltmaking process, making it a perfect finish that elevates both savory dishes and desserts.

Our sea salt is made through a careful, multi-step process that starts with seawater from Netarts Bay. The seawater is pumped, filtered, and then transferred into a reverse osmosis machine, where it is further filtered and reduced to a concentrated saltwater, which is called prebrine. Next, this prebrine is pumped into large boil tanks where excess minerals are removed and the prebrine continues to reduce down to brine. The brine is then pumped into custom-made evaporation pans and carefully heated, creating beautiful sea salt.

The flakes are gently scooped from the pans, rinsed, and put onto racks in a dehydrator for drying. Finally, every flake of salt is sifted and sorted. Larger pyramid-shaped crystals become our flake salt, while smaller and more broken crystals are used for our kosher salt.

We harvest our Pure Flake and Kosher Sea Salt from the cold, pristine waters of Netarts Bay on the Oregon Coast. Our Pure Italian Fine Sea Salt is harvested by our partners in Trapani, Italy, in open-air salt ponds fed by the Mediterranean Sea.

In order to create our premium salt crystals, we start with seawater from Netarts Bay, Oregon–a spot chosen for its bright salinity, thanks in part to the millions of oysters in the bay that act as a natural filter. Our sea salt is the result of filtering and heating Pacific seawater until it becomes brine. Once the brine reaches our evaporation pans, when the conditions are just right, the salt crystals begin to form on the surface of the water. The salt crystals form pyramid-like structures, and once they are heavy enough, they snow down to the bottom of the evaporation pans. Once this process is complete, the salt crystals are gently scooped from the bottom of the pans before drying.

Not all seawater is the same. Founder, Ben Jacobsen, tested 27 sites all along the Washington and Oregon coasts before landing in Netarts Bay, just south of Tillamook, Oregon. This spot was chosen specifically because of its bright salinity, thanks in part to the number of oysters in the bay that act as a natural filter. In addition, with just a few seasonal creeks flowing into it, Netarts Bay has very little freshwater runoff, and consequently higher than normal salinity readings for the Oregon Coast.

The seawater of Netarts Bay is what gives our salt its signature flavor: bright, briny, and free of any bitter aftertaste.

Jacobsen Salt Co. is an Oregon company that has hand-harvested sea salt from Netarts Bay on the Oregon Coast since 2011, and that place is largely what makes our salt different. Founder Ben Jacobsen tested 27 sites along the Washington and Oregon coasts before choosing Netarts Bay for its exceptionally bright salinity, helped by the bay's oyster beds, which act as a natural filter.

We strive to craft the purest sea salt possible. Many other salts on the market use anti-caking agents and are iodized, which can lead to a bitter, metallic aftertaste. Salt was originally iodized based on health concerns in the 1920s, to help prevent people from getting iodine-deficient illnesses. Now we have a much more diverse diet and can get iodine in our diets more easily.

From a proprietary evaporation and drying process to hand-grading every single batch, we make salt with integrity and care.

Jacobsen Salt Co. offers a wide variety of pure sea salts and infused sea salts. Our Oregon sea salts, harvested from Netarts Bay, include our Pure Flake Sea Salt (large pyramid crystals for finishing), and our Pure Kosher Sea Salt (coarse, fluffy crystals for everyday cooking). Our Italian sea salt, harvested from the traditional salt ponds of Trapani, includes our Fine Sea Salt (versatile small, uniform crystals for baking, cooking and seasoning). This Italian sea salt is also used to make our Disco di Sale (salt discs for boiling and blanching).

ITALIAN SEA SALT

Fine sea salt is sea salt that's typically ground into small, uniform crystals that dissolve quickly and measure precisely, making it the most versatile salt for everyday cooking, baking, and seasoning. Its even grain is ideal any time a recipe needs an exact amount, like salting pasta water or making pastries.

Jacobsen Salt Co. offers fine sea salt in the form of our Pure Italian Fine Sea Salt, harvested in Trapani, Italy.

We source our Fine Sea Salt from Trapani, Italy. The open-air salt ponds of Trapani, combined with its unique climate, create an environment where saltmaking can truly thrive. Our farmer-partners harvest the salt each year using a traditional method powered by soil, sun, and wind.

The main differences are where they're made, how they're harvested, and how you'll use them.

The process we use at our Oregon Coast facility produces our Flake Sea Salt (large grain) and Kosher Sea Salt (medium grain), while our Italian partners produce our Fine Sea Salt (small grain). Our Oregon Salts are harvested using our specially developed heating and evaporation process. In contrast, our Fine Sea Salt is harvested in ancient tradition, using open-air salt ponds and solar evaporation.

While similar in grain size to table salt, our Pure Fine Sea Salt is free of any additives that might impart a bitter taste or impact the preserving process.

We are invested in producing and offering the finest quality, hand-harvested sea salt, and we're naturally curious about other saltmaking traditions. When looking to offer a finer grain of sea salt, we chose to partner with a small saltmaking team in Trapani, Italy, who bring a similar ethos to crafting their Italian salt. Trapani is one of the world's greatest salt-making regions, with centuries-old traditional harvesting methods that we're proud to share. Their fine sea salt yields a briny flavor and texture that is ideal for everyday cooking and baking, and it's a great complement to our pure flake and kosher sea salt.

As with our Oregon Sea Salt, what makes our Italian Sea Salt special comes down to source and process. The salt ponds — or salt pans — sit at the meeting of the Tyrrhenian and Mediterranean Seas, a geographical circumstance that yields a salt both briny and dulce, or delicate in flavor. Each spring, our farmer-partners begin the months-long process, paying close attention to sun, wind, soil, and salinity until the salt is ready to harvest.

The result is pure, briny, uniform salt crystals, a staple of any kitchen and ideal when a recipe calls for a precise measurement of salt.

Our Fine Italian Sea Salt is a versatile everyday salt, perfect for cooking and baking. Its small, uniform crystals make it ideal for brining and salting pasta water.

Our saltmaking facility is located on the Oregon Coast, in Netarts Bay, five miles outside of Tillamook. Our address is 9820 Whiskey Creek Rd Tillamook, OR 97141.

Not at this time. We don't currently have the capacity to offer tours, but we'll post details on our site if that changes. While we do not offer tours of our saltmaking facility, we welcome visitors at our Netarts Bay gift shop. Here, you can see the bay where we start the saltmaking process and purchase our products directly from the source.

Our gift shop is located onsite at our saltmaking facility in Netarts Bay. We are currently open Monday through Saturday from 10am - 4pm, and on Sunday from 11am - 4pm. Check out our Visit Us page for more info.

SEASONINGS

Furikake is a Japanese seasoning blend (the name loosely means 'sprinkle') that's a staple in many Japanese home kitchens, typically sprinkled over rice for a savory, umami-rich crunch.

Our Furikake starts with our Pure Kosher Sea Salt from Netarts Bay, then we add in Wadaman sesame seeds, dulse (a type of seaweed), and a touch of dried mushroom and sugar. Sprinkle it liberally over popcorn, eggs, tofu, avocado toast, or roasted vegetables. (Contains sesame and dulse; dulse is ocean-harvested and may contain trace shellfish.)

Use furikake as a finishing seasoning: sprinkle it liberally over food just before eating for a hit of savory, umami crunch. It's typically enjoyed with rice, like on onigiri, but it's just as good on popcorn, fried or scrambled eggs, tofu, avocado toast, noodles, roasted vegetables, or grain bowls.

There's no cooking required; think of it as a flavor-packed alternative to a final pinch of salt.

Ramen seasoning is a savory, umami-rich blend made to build quick depth of flavor in broths and bowls. Jacobsen Co.'s Ramen Seasoning brings together ginger, garlic, white pepper, and organic yeast extract with our pure Fine Sea Salt, harvested from traditional salt ponds in Trapani, Italy.

To use it, upgrade your ramen broth by dissolving 1½–2 teaspoons per 2 cups of water or stock, or shake it directly onto your favorite grain bowl. It's just as good on noodles, eggs, roasted vegetables, and marinades.

Tellicherry peppercorns are a premium grade of black pepper consisting of larger, more mature berries that develop deeper aromatics and a brighter, more complex flavor than standard black pepper.

Our Sourced Tellicherry Peppercorns add beautiful aroma, bright pepper flavor, and gentle spice to everyday dishes, and they're at their best freshly cracked from a mill or grinder. We offer our Sourced Tellicherry Peppercorn Grinder as well as a refill jar for when you're running low, but if you're looking for that perfect salt-and-pepper mix, our Infused Black Pepper Salt has you covered.

Steak seasoning is a savory blend of salt, pepper, and aromatic herbs and spices made to build a bold, flavorful crust on beef and other proteins. Our signature blend layers savory garlic, fragrant rosemary, dried herbs, and crushed black pepper with our Pure Kosher Sea Salt, hand-harvested from Netarts Bay on the Oregon Coast.

To use it, season generously and use it to coax the boldest flavors from choice cuts of meat, or from your favorite roasted root vegetables and potatoes.

RAW HONEY

Jacobsen Co. Raw Honey comes from the Pacific Northwest. We work with local beekeepers who produce raw honey for us from various hives throughout the region. Our raw honey varietals come from different farms throughout various PNW regions and counties, as noted on each jar.Our honey is sustainably harvested and never heated, treated, blended, or ultra-filtered. Because bees forage up to five miles from their hives, other nearby nectar sources can subtly influence the flavor, and the exact source can vary from jar to jar and year to year depending on hive health.We also produce a Microlot Raw Honey line, including our award-winning Portland Riverfront Raw Honey, from hives our own team stewards across Oregon through the Jacobsen Co. Hive Steward Program.

Raw Honey will never truly expire. Stored in a sealed jar away from heat and moisture, honey keeps almost indefinitely thanks to its natural chemistry. Over time, you may notice it turns cloudy, grainy, or solid; that's crystallization. You can return the honey to its natural liquid state by placing the jar in a warm water bath to gently heat the honey. When doing so, avoid boiling water and/or using the microwave, which can damage the delicate qualities that make raw honey special.

The difference is in the processing. Most regular honey is heated (pasteurized) and ultra-filtered for a clear, uniform look and long shelf stability, steps that can strip away natural pollen, enzymes, and nuance. Raw honey avoids all these steps, preserving the honey's natural quality and taste.

Every variety of Jacobsen Co. Raw Honey is single-origin, sustainably harvested, and never heated, treated, blended, or ultra-filtered, so it keeps the distinct flavor, aroma, and character of the specific Pacific Northwest region its bees foraged.

Each jar of single-origin honey comes from a single geographic location, giving every varietal its own distinct flavor profile.

Rather than blending honey from many sources for uniformity, as most commercial honey does, we keep each batch tied to its specific Pacific Northwest apiary, so the honey tastes like the flora and forage of that place. Because bees forage seasonally, each harvest may vary slightly in color and flavor depending on what's in bloom.

Both are raw, single-origin Pacific Northwest honey; the difference is who keeps the bees. Our Raw Honey comes from hives managed by our regional beekeeping partners across the PNW, while our Microlot Raw Honey comes from hives our own in-house beekeeper and team personally maintain and harvest.

Those microlot hives are managed through the Jacobsen Co. Hive Steward Program, and releases like our award-winning Portland Riverfront Raw Honey are smaller, special-batch harvests from those stewarded Oregon hives.

Our raw honey cannot be certified organic. Honey can only be certified organic if every plant within a hive's foraging range is grown organically. Bees forage for miles, and we can't control what they eat (especially in places like the Oregon high desert), so that certification isn't possible.

What we can promise is that every jar is raw and single-origin: sustainably harvested and never heated, treated, blended, or ultra-filtered.

No, honey should not be given to infants under 12 months old. Raw honey can contain naturally occurring spores that a baby's developing digestive system can't yet handle, which is why pediatric guidance recommends waiting until after a child's first birthday.

For everyone older than one, our raw honey is wonderful to enjoy. (If you have specific concerns, check with your pediatrician.)

ALLERGENS

No Jacobsen Salt Co. products are certified gluten-free. Our Pure Salts (including sourced salts), Infused Salts, Seasonings and Raw Honey do not contain gluten. The only exceptions are our Natural Licorice and Salty Black Licorice, which contain wheat.

We do not add any supplementary iodine to any of our salts for the sake of taste (iodine can make salt taste bitter), but our Oregon and Italian Sea Salts have a very trace amount of naturally occurring iodine, approximately <50mcg per 100g of salt. The serving size of our salts is 1g (1/4 tsp), so the amount of naturally occurring iodine in that 1g serving size is very small.

Iodine was originally added to table salt to prevent iodine-deficiency illnesses, but most people today get enough iodine from a varied diet.

Yes, most Jacobsen Salt Co. products are kosher. Our Pure Sea Salts, Raw Honey, and most of our Infused Salts are certified through the Orthodox Union (OU), and you'll find the OU symbol on the back of our packaging near the ingredients lists.

A few of our products are not kosher-certified: Infused Pinot Noir Salt, Infused White Truffle Salt, and our Himalayan Pink Salt.

We source with the same care we put into our salt. Our mission is to create salt and premium pantry staples that transform the way people cook, which means harvesting our own sea salt by hand at Netarts Bay, partnering directly with trusted producers for sourced goods (like our Italian sea salt and our Wadaman sesame seeds), and choosing quality ingredients we're proud to put our name on.

We do not accept returns, including items purchased from another retailer, because it isn't safe to let food items re-enter our food processing facility or warehouse once a customer has received them.
